This baked goat cheese marinara dip is so simple, but also feels rich and decadent — it’s our go-to Christmas Eve appetizer after church, before dinner.

If you have ever been to Carrabba’s and someone at the table quietly ordered the “Scotty Thompson” — the off-menu goat cheese marinara dip that regulars know to ask for — you already understand why I had to figure this one out at home. We found the restaurant version decades ago and it was delicious.

This baked goat cheese marinara dip starts with yellow onions cooked low and slow until they are golden and just starting to caramelize, then garlic, hand-crushed whole tomatoes, and fresh basil stirred in at the very end so it still tastes like basil (so fragrant). Goat cheese gets sliced on top and broiled until golden brown. The whole thing takes about 30 minutes and comes in at 78 calories per serving — sauce and cheese included, bread is on you. Our favorites are Stecca from our local grocer or a baguette, both warmed or toasted.

Baked Goat Cheese Marinara Dip

Ingredients

150g yellow onion, finely chopped (~1/2 large onion)

2 tbsp extra-virgin olive oil

1 tbsp minced garlic

1 can (28 oz) whole tomatoes in juice

1/2 tsp salt

1/2 tsp ground black pepper

1/4 cup coarsely chopped fresh basil

4 oz goat cheese

Directions

  • Combine the onion and oil in a medium saucepan over medium heat. Cook, stirring occasionally, until the onion is golden brown and just beginning to caramelize (about 10 minutes).
  • Add the garlic and stir until fragrant, about 1 minute.
  • Pour the tomatoes and their juices into a bowl and crush them between your fingers. Add the crushed tomatoes and juices to the saucepan and bring to a simmer.
  • Reduce heat to medium-low. Simmer, stirring often, until the sauce has thickened and reduced slightly (about 15-20 minutes). Season with salt and pepper.
  • Remove from heat. Sprinkle the basil over the sauce and cover with the lid. Let stand 5 minutes, then stir in the basil.
  • Slice goat cheese into 1/2 oz rounds (8 total). Place on top of the sauce and broil on high for a few minutes until golden brown.
  • Serve alongside your favorite bread (not included in macros).

Storage: Sauce can be cooled, covered, and refrigerated for up to 3 days, or frozen for up to 2 months. Thaw overnight in the fridge before using. Add goat cheese and broil when ready to serve.
