I have a serious sweet tooth. Chocolate is something I’d like to enjoy after dinner, and I’m not going to pretend that’s ever going to change. But I also watch my added sugar intake pretty closely and try to eat a high protein, high fiber diet most of the time, which means I can’t just grab a slice of grocery store cake every time the craving hits. So I made my own.
This Kodiak chocolate cake has been one of my most-requested recipes since I started sharing it, and I think it’s because people can’t believe the macros. 170 calories, 12g of protein, 4g of fiber, and genuinely rich chocolate flavor with no protein powder anywhere in the ingredient list. The protein comes from the Kodiak Power Cakes dark chocolate mix and Oikos Pro vanilla yogurt, and the fiber comes along for the ride because sugar free chocolate chips have a surprising amount. It tastes like something you’d hide from your kids (except my kids find it every time and demolish it within two days, so hiding it doesn’t work anyway).
I make this at the beginning of the week and keep it in the fridge. When I want something sweet after dinner, I slice off a piece and pair it with whatever berries are in season and a little extra yogurt or whipped cream on top. It doesn’t wreck your macros but also doesn’t taste like you’re eating cardboard and pretending to enjoy it. It’s actually good, promise. My boys eat it for snack, for dessert, sometimes for breakfast if I’m being honest (and the macros honestly support that).
The base for this recipe is the same one I use for my high protein Biscoff cake — Kodiak mix, Greek yogurt, eggs, applesauce, monk fruit, and Fairlife milk. That combination creates a cake that stays moist for days in the fridge without drying out. For this Kodiak chocolate cake version, I swapped in the dark chocolate Kodiak mix, added cocoa powder to push the chocolate flavor even deeper (plus add fiber!), and topped it with Lily’s sugar-free chocolate chips because if I’m making a chocolate cake, it’s going to be chocolate.

Ingredients
190g Kodiak Power Cakes dark chocolate flapjack and waffle mix
1 tsp baking powder
20g cocoa powder (1/4 cup)
pinch of salt
24g granulated monk fruit (2 tbsp)
230g Oikos Pro vanilla yogurt (1 cup)
2 large eggs
90ml Fairlife skim milk
1 tsp vanilla extract
60g unsweetened applesauce (1/2 cup)
15g sugar-free chocolate chips (I use Lily’s)
Directions
- Preheat oven to 350 degrees. Lightly spray a 9×5 loaf pan with olive oil spray.
- In a small bowl, whisk the pancake mix, cocoa powder, baking powder, and salt together.
- In a medium bowl, whisk the granulated monk fruit, yogurt, eggs, skim milk, vanilla, and applesauce together.
- Stir the dry ingredients into the wet until just combined. Don’t overmix.
- Pour the batter into the loaf pan and place 15g of chocolate chips on top.
- Bake for 40-50 minutes or until a toothpick comes out clean in the middle.
- Let cool in the pan for 10-15 minutes before slicing. Store in the fridge for up to 5 days.
