This high protein Biscoff cake is what happens when you take the warm, spiced flavor of a Biscoff cookie and turn it into a loaf you can slice all week. It’s made with Kodiak mix and Greek yogurt for a major protein boost, sweetened with monk fruit, and topped with a protein cookie butter glaze that honestly makes the whole thing 10x more delicious. At 233 calories and 17g protein per slice, it tastes like something you shouldn’t be allowed to eat on a cut — but you absolutely can.

190g Kodiak flapjack & waffle mix
1 tsp baking powder
1 1/2 tsp cinnamon
1/2 tsp ground ginger
pinch of salt
230g Oikos Pro vanilla yogurt
2 large eggs
24g monk fruit (or sub sugar)
90ml Fairlife skim milk
1 tsp vanilla extract
60g unsweetened applesauce
4 Biscoff cookies, crumbled
Glaze
9 Biscoff cookies
40g vanilla protein powder
1/2 tsp cinnamon
1/8 tsp ground ginger
1/2 tsp vanilla extract
90ml Fairlife skim milk
Directions
- Preheat oven to 350 degrees. Lightly spray a 9×5 loaf pan with olive oil spray.
- In a small bowl, whisk the waffle mix, baking powder, cinnamon, ginger, and salt together.
- In a medium bowl, whisk together the yogurt, eggs, monk fruit, milk, vanilla, and applesauce.
- Whisk the dry ingredients into the wet until combined. Stir in the cookie crumbles.
- Pour the batter into the loaf pan. Bake for 40-50 minutes, until lightly golden and a toothpick comes out clean.
- While cooking the cake, prep the glaze: in a food processor, add all the glaze ingredients except the vanilla and milk. Blend until it’s mixed into fine crumbs. Add the vanilla and milk, and mix again. Set aside.
- Once cake is cooled (about 20 minutes), pour the glaze on top and serve. Save a few extra crumbs (1/4 cookie) for the top, if desired.
