Ingredients
1 large egg
1/2 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp ground ginger
1/4 tsp ground cloves
1 tsp vanilla
24g (2 tbsp) golden monkfruit (or sub brown sugar)
1 tsp baking soda
80g whole wheat flour (or sub all purpose)
1/4 cup unsweetened applesauce
70g diced apple (about 1 small apple)
1/3 cup skim milk
Cinnamon Sugar Topping:
12g (1 tbsp) golden monkfruit (or sub brown sugar)
1 tsp cinnamon
Directions
- Preheat oven to 350 degrees.
- Lightly coat a 6-donut tray with olive oil spray. Set aside.
- Peel, core, and thinly dice a small apple. Weigh out 70g.
- Whisk flour, cinnamon, nutmeg, ginger, cloves, and baking soda together in a medium bowl.
- Whisk egg, vanilla, golden monkfruit, applesauce, and skim milk together in a small bowl.
- Combine wet ingredients into the dry ingredients.
- Gently fold in diced apples (don’t overmix).
- Scoop batter into donut molds. (I like to place into a ziploc, cut the bottom corner, and squeeze into the molds).
- Bake for 8-12 minutes or when a toothpick comes out clean.
- While baking, add the extra cinnamon + monkfruit together on a shallow plate.
- Once done, lightly spray each side of the donuts with olive oil spray and then immediately dip into the cinnamon sugar mixture.
- Serve immediately or store in an airtight container for up to 3-5 days in the fridge.
