That fiber number matters because most protein breakfast recipes are completely fiber-dead. They rely on white flour or straight protein powder as their base and the fiber content is basically zero. I originally made this for my boys years ago when I was trying to find weekend breakfasts that felt special but did not completely blow our macros for the day. Traditional cinnamon rolls were a non-starter (the sugar and butter in a Cinnabon-style roll puts you at 800+ calories before you have even had coffee). This healthy cinnamon roll bake changed everything. I can prep it in about 10 minutes, slide it in the oven, and have breakfast for the whole family in under 40 minutes total. My boys think they are getting a treat. They are. It just happens to have 18 grams of protein and 4 grams of fiber hiding behind all that cinnamon.
The icing is what makes this feel indulgent. It is a cheesecake-style topping made with Greek yogurt, vanilla protein powder, and sugar-free cheesecake pudding mix. You dollop it on right when the bake comes out of the oven and smooth it across the top. It melts slightly into the warm bread and creates that gooey, frosted cinnamon roll effect that makes the whole thing feel like dessert for breakfast.
A few things that make this recipe worth bookmarking: the base is real bread, so the texture is soft and custardy (more like a French toast bake than a dense protein bar). The monk fruit sweetener keeps the sugar low without any aftertaste, but you can sub regular sugar or brown sugar if monk fruit is not your thing. Ingredients
Bake
4 large eggs
184g egg whites (3/4 cup)
120ml Fairlife skim milk (1/2 cup)
36g Lakanto monk fruit (3 tbsp, or sub sugar)
1 tbsp cinnamon
1 tbsp vanilla
12 slices Dave’s Killer Bread thin sliced (21 Whole Grains), cut into 1.5 inch cubes
Drizzle Topping
28g light butter (2 tbsp)
1 tbsp cinnamon
24g Lakanto golden monk fruit (2 tbsp, or sub light brown sugar)
Icing
340g nonfat Greek yogurt, plain
30g vanilla protein powder
16g sugar-free cheesecake pudding mix
Directions
- Lightly coat a 9×13 pan with olive oil spray. Preheat oven to 350 degrees.
- Add eggs and egg whites to a medium bowl and whisk.
- Add milk, monk fruit, cinnamon, and vanilla. Whisk together.
- Add bread and toss around to soak up the liquid. Pour immediately into a 9×13 pan.
- Melt the butter, then add the cinnamon and golden monk fruit. Stir to combine.
- Pour the drizzle over the casserole.
- Bake at 350 degrees for 25-35 minutes.
- While baking, prepare the icing: whisk the yogurt, protein powder, and pudding mix together in a small bowl.
- Once done baking, dollop the icing over the top and smooth around. Serve immediately.
Storage: Can be stored in the fridge and reheated, but it is best right out of the oven.
